Summer is still there, but the fall knocked softly on the door ... what could be more perfect than a dish that combines the taste of both seasons, as these delicious, homemade pumpkin gnocchi with basil and tomatoes!
We need:
* 1 kg pumpkin (such as Marina
di Chioggia or Hokkaido)
* Salt, some
freshly grated nutmeg
* 125 g wheat flour,
* 50 g
freshly grated Parmesan cheese
* 500 g
tomatoes,
* 2
tablespoons olive oil
* 40 g butter,
* Pepper,
* 2 tablespoons finely chopped basil
Step 1
Cut the
pumpkin into columns, remove seeds and peel. Dice the
flesh coarsely and steam in a pot with strainer insert about 20 minutes.
Step 2
Press the hot pumpkin through a potato press (about 400 g). Add 1 teaspoon salt, nutmeg and flour and knead everything. Gradually, add Parmesan until the mass is smooth enough.
Step 3
Form the
mass on a work surface with some flour to about 2 cm thick rolls and cut into
finger-thick pieces. Press the pieces of dough lightly
with a floured fork. Place on a dish towel dusted with
flour.
Step 4
Peel tomatoes, remove seeds. Dice the flesh. Cook the Gnocchi in portions in plenty of salted water for 2-3 minutes until they
float to the surface. Drain, place covered warm. Heat oil and butter, swirl to tomatoes, salt and pepper. Stir in basil, serve with the gnocchi.
If
desired, sprinkle with coarsely grated Parmesan cheese.
